Eating Wagyu steak is a decadent experience, because the intense marbling found in this kind of beef makes it exquisitely tender and delicious. You don’t want to do anything to diminish the experience, so what’s the best way to grill steak from Wagyu cattle? Here are some tips for how to cook steak when you’re working with Wagyu.
- Never overcook Wagyu. You may think you’re a pro at grilling steak, but Wagyu cooks quickly, so it’s always best to err on the side of undercooking. A rare steak can always go back on the grill for a little bit longer if you decide you want it more well done. Medium rare is considered the best way to enjoy the sweet buttery flavor and luxurious mouthfeel of Wagyu.
- Keep your Wagyu beef at the right temperature. You’ll probably receive it frozen, and you should put it into your freezer immediately. When you are ready to cook it, thaw it in the fridge first for six hours per pound. Before cooking, let it sit out of the refrigerator for about 30 minutes before you’re ready to prepare it.
- Prep your grill for your Wagyu steaks. Even if you think you know how to grill steak, grilling steak from Wagyu beef requires care. Charcoal grilling is not recommended, and it’s important to let your gas grill reach 500° before you place your steaks on it. While your grill is preheating, wipe your steaks with a paper towel to absorb excess moisture. You don’t have to season Wagyu, but a salt and oil rub can enhance the flavor. Then too, if you want to experiment with seasonings, you can play around and come up with your own steak recipes for the perfect Wagyu to suit your tastes. Just be careful not to overwhelm the delicate taste with marinades or heavy seasonings.
- Let your steaks have some alone time. Put them on the grill diagonally and close the lid, leaving it closed for about three minutes. Turn them over, and then let them cook for another three minutes. Check the steak’s temperature to see if it’s to your liking before deciding whether to cook it longer: in general, every three minutes on a closed grill warms your steak another 10-15 degrees.
- If you don’t want to grill, consider cast iron. Preheat a cast-iron skillet over high heat, greasing it lightly with butter or fat you’ve trimmed from your steak. Sear for three to four minutes per side, then let it rest so the juices can redistribute evenly.
