You’re in for a treat if you’ve never slow-cooked American Wagyu chuck roast in an instant pot. Ingredients

4 pounds of boneless American Wagyu chuck roast

4 cups of vegetable or beef broth

1 cup of chopped cilantro

2 chopped green onion stalks

5 finely chopped garlic cloves

1 cup of shredded napa cabbage

½ inch nub of grated ginger

¼ cup of rice vinegar

1/3 cup of coconut sugar

½ cup of tamari

1 tablespoon of cracked pepper

1 tablespoon of sriracha

A pinch of garlic salt

Recipe Notes

  1. Set your instant pot to the sauté setting and sauté your chopped garlic cloves and grated ginger on high until they’re golden.
  2. Season both sides of your American Wagyu chuck roast with garlic salt. Add the chuck roast to your pot, flipping it after five minutes. Both sides of the chuck roast should be lightly browned.
  3. Add your broth, coconut sugar, sriracha, tamari, and rice vinegar.
  4. Set your instant pot to the stew setting and seal it. After it’s finished venting, remove your chuck roast and begin shredding it gingerly with a fork.
  5. Serve the shredded American Wagyu beef with broth over steamed jasmine rice or noodles and top with shredded napa cabbage, cilantro, chopped scallions, and chili flakes (to taste). Add a squeeze of fresh lime or a pile of sauerkraut for an additional burst of flavor.
